PEANUT BUTTER BANANA BITES

This high protein snack is simple and healthy.  With just 6 ingredients, these take less than 10 minutes to make, and are a family favorite.  Perfect for a quick breakfast or afternoon snack!

My husband is a teacher, so when school starts, life gets crazy!  Not only do I have to organize and get started homeschooling my kiddos, I also have to adjust to Luke being gone for looooong days.  After having him home more over the summer, it’s always such a rude awakening to have him gone so much in the fall.  Since he is coaching football and wrestling this year, he doesn’t get home until after dinner and the days seem to drag on forever. Prepping quick and easy snacks and meals makes my life so much easier during these busy months.  The last thing I want to do is spend a ton of time in the kitchen cooking and cleaning up.  With 3 kids under 4, I cannot leave them alone for very long without them getting into trouble. 🙂

Enter these Peanut Butter Banana Bites.  With life being so crazy right now, I’m searching for quick and easy breakfast and snack recipes.  Luckily, this one doubles as both!  I’m all for anything that can save me time, especially when school is just starting up and I’m still trying to figure out how to make it all work.  These delectable little bites are full of protein, fiber, and nutrients. The ingredients are simple and wholesome, and you can easily customize these to fit your family’s taste!  As an added bonus, these are portable, so you can easily take them and run.  Feel free to add in dried fruit, nuts or seeds, or if you are feeling like a treat, some dark chocolate chips!

PEANUT BUTTER BANANA BITES

Ingredients

  • 4 cups bran flakes
  • 2 bananas
  • 8 dates, pitted*
  • 1 cup peanut butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Optional: dried fruit, nuts or seeds

Instructions

  1. Process bran flakes in food processor for a few seconds to break them up a bit. Transfer them to a bowl. Add the rest of the ingredients (except the optional dried fruit or nuts) to the food processor, and process them until the mixture is smooth and well combined. Transfer the mixture to the bowl with the bran flakes and any optional add-ins, and mix with your (clean) hands until it is all combined. Form into 1 inch balls and store in the refrigerator until you are ready to eat them. Enjoy!

Notes

*Make sure dates are soft. If they are dried out, soak them in hot water for a few minutes to soften them up.
