My Paleo Journey
After my third child was born, I felt constantly exhausted, and was experiencing lots of new digestive problems. I struggled to lose any weight, and I was desperate to feel healthy and full of energy again. I began reading books and articles searching for answers, and stumbled across the Paleo diet in an article about healing digestive issues. I made my shopping list, cleaned out my pantry, and started cooking and eating only Paleo foods. After eating Paleo for a couple weeks, I was losing weight, and my energy had returned. I felt like a new person! However, changing to a new way of eating was overwhelming and difficult. I felt like I was eating the same boring foods every day, and I was spending way too much time in the kitchen. Plus, a lot of the new recipes I tried didn’t even taste good, and I would end up wasting tons of money on expensive ingredients that I had to throw in the trash. With 4 kids ages 5 and under, I wanted easy, affordable recipes that my whole family would enjoy. I didn’t want to have to miss out on enjoying family meals and celebrations. I wanted to enjoy eating again! After trying lots AND LOTS of Paleo recipes, and reading every Paleo cookbook I could get my hands on (and using some creativity), I’ve learned how to plan meals that are delicious, but don’t require hours in the kitchen. Now I have time to cook (and eat!) healthy foods I enjoy, while still leaving time to spend doing the things I love.
