AIP DESSERT PIZZA (PALEO, WHOLE30)

This AIP dessert is beautiful and delicious. It’s always a crowd-pleaser, great for a celebration or potluck! Creamy coconut whipped cream goes well with any fruit you choose, so you can easily customize this based on whatever fruit is in season where you are.

Dessert pizza has always been one of my favorites, topped with different fruits it is the perfect summery dessert! This AIP-friendly version can be made Paleo and Whole30 as well – it is perfect when you need a dessert that can feed those with dietary restrictions. I hope you enjoy it as much as I do!

 

HOW TO MAKE THIS AIP DESSERT PIZZA

Super simple – just cut a watermelon into rounds, make the coconut cream, and layer on your favorite fruits! If you want to get super fancy, you could drizzle a caramel or chocolate sauce over the top, or shave some dark chocolate over the top.

CAN YOU HAVE CHOCOLATE ON AIP?

Chocolate is not allowed in the elimination phase of AIP, so avoid adding chocolate if you are currently in the elimination stage. Many AIP’ers use carob in place of chocolate, and while it is not exactly the same taste-wise, it works really well as a substitute.

WHAT SWEETS CAN I EAT ON AIP?

While sweets are allowed on AIP, it is recommended you consume them in moderation, as sugar (even the AIP-compliant kind) can increase inflammation, and many with autoimmune disease find that sugar can trigger a flare in symptoms. Ultimately, you know your body best, so do what works for you. I love that this recipe feeds my sweet tooth, but is filled with fiber and nutrition, and most of the sweetness comes from fruit.

TIPS FOR MAKING THIS AIP DESSERT PIZZA

  • The coconut whipped cream can be made ahead of time, so if you don’t have a ton of time to spend on this right before you eat it, you can easily prep the whipped cream and fruit ahead of time
  • SO many different toppings would work for this pizza – peaches, nectarines, berries, kiwi, cherries, citrus fruits, toasted coconut – the sky is the limit!
  • I love adding some fresh mint or chocolate shavings on top for a little extra flavor!
  • If your coconut whipped cream is not thickening up – don’t worry! Just add a little tapioca starch, 1 tablespoon at a time, and keep mixing.
  • My favorite brand of coconut milk is this one!

Ingredients

Small, mini watermelon, cut into rounds

2 cups of fruit (any kind you want!)

Optional: Mint, lime zest, toasted coconut, chocolate shavings or any other toppings you want!

2 cans coconut milk, refrigerated overnight

2 tablespoons maple syrup (leave out for Whole30)

2 teaspoons vanilla extract (optional)


Instructions

Make the coconut whipped cream by scooping the cream out of the cans of coconut milk, and mix them using a mixer on high speed until light and fluffy.  Refrigerate until ready to use.  To build the pizzas, take a watermelon round, spread whipped cream over the top, and arrange fruits and other toppings.  That’s it!
