This AIP dessert is beautiful and delicious. It’s always a crowd-pleaser, great for a celebration or potluck! Creamy coconut whipped cream goes well with any fruit you choose, so you can easily customize this based on whatever fruit is in season where you are.
Small, mini watermelon, cut into rounds
2 cups of fruit (any kind you want!)
Optional: Mint, lime zest, toasted coconut, chocolate shavings or any other toppings you want!
2 cans coconut milk, refrigerated overnight
2 tablespoons maple syrup (leave out for Whole30)
2 teaspoons vanilla extract (optional)
Make the coconut whipped cream by scooping the cream out of the cans of coconut milk, and mix them using a mixer on high speed until light and fluffy. Refrigerate until ready to use. To build the pizzas, take a watermelon round, spread whipped cream over the top, and arrange fruits and other toppings. That’s it!
