CHOCOLATE HAZELNUT BUTTER

This chocolate hazelnut butter is creamy and rich, without all the added sugar. It’s perfect for dipping fruit, spreading on a crepe, or frosting a cupcake.

My kids go crazy for dips, but some the sweet dips have SO much added sugar. I love that this chocolate hazelnut butter is sweetened with dates. It tastes like a treat, but is a well-rounded snack, with a balance of fat, protein, and fiber. Bonus: It’s perfect for packing in a lunch box! 🙂

IS DARK CHOCOLATE PALEO?

Dark chocolate CAN be paleo, it just depends on what type of sweetener is added. You want to look for a dark chocolate that is made with a Paleo-approved sweetener for a 100% paleo-compliant chocolate. Hu is one brand of paleo-friendly chocolate that I love.

TIPS FOR MAKING THIS RECIPE

  • Soaking the dates before blending makes them so much softer and easier to blend, so don’t skip that step
  • Buying hazelnuts without the skin saves SO much hassle, so I recommend buying them without skin if you can – I find some without the skins at Costco, but they’re available online as well

Description

This chocolate hazelnut butter is creamy and rich, without all the added sugar. It’s perfect for dipping fruit, spreading on a crepe, or frosting a cupcake.


Ingredients

SCALE

2 cups hazelnuts (with skins removed*)

1 1/2 cup dates (about 25), soaked in boiling water for 10 minutes

3 tablespoons cocoa powder

2 teaspoons vanilla extract

pinch of salt

1 cup of water or less


Instructions

Preheat oven to 350 degrees F.  Roast hazelnuts for 15 minutes, shaking every 5 minutes or so to prevent burning.  Add hazelnuts to food processor or high speed blender and blend until they are smooth and creamy, which takes about 5-8 minutes.  Add dates, cocoa, vanilla,  and salt and continue to blend.  Gradually drizzle in water until it reaches the desired consistency.  Enjoy!


Notes

*To remove skins from hazelnuts, roast them and then shake in a mason jar, or roll between 2 towels to remove the skins.
