CINNAMON MASHED ACORN SQUASH

Creamy and sweet and spiced with cinnamon, this cinnamon mashed acorn squash is a warm and inviting side dish that pairs perfectly with a variety of main dishes.

I love simple side dishes, and this mashed acorn squash is perfect for those nights when you want a warm and comforting side without all the fuss.

WHAT DOES ACORN SQUASH PAIR WELL WITH?

Cinnamon mashed acorn squash is great alongside chicken, turkey or beef. Since the acorn squash roast in the oven, you could easily bake up a sheet pan of meat and veggies while the squash is roasting. If you prefer a vegetarian meal, this would be perfect alongside a hearty vegetarian bean stew, or a bowl of pasta. You really could pair it with just about anything!

HOW DO YOU PICK OUT AN ACORN SQUASH?

When you’re picking out an acorn squash, choose one that is mostly green, with smooth, dry skin. You don’t want a shiny squash or one with wrinkled skin or soft spots. To prepare the squash, you’ll need to cut it in half with a sharp knife (be careful!) and scoop out the seeds with a spoon.

HOW TO MAKE CINNAMON MASHED ACORN SQUASH:

  • Cut the squash in half and scoop out the seeds
  • Place face down on a rimmed baking dish with about a 1/2 inch of water in the bottom. I love these rimmed baking trays!
  • Bake at 400 degrees F for 45-55 minutes, until the flesh is soft
  • Scoop out the softened squash and mash it up, mixing it with coconut oil, maple syrup, and cinnamon
  • Enjoy!

Ingredients

2 acorn squash (3 cups mashed)

1 tablespoon coconut oil

1/4 cup maple syrup

1 teaspoon cinnamon

1 teaspoon vanilla extract

1/8 teaspoon salt


Instructions

Preheat oven to 400 degrees F.  Cut squash in half, scoop out seeds, and place face down in a rimmed baking dish.  Pour in 1/2 inch of water into baking dish.  Bake squash for 45-55 minutes, until squash is soft enough to mash.  Scoop squash out of skin (be careful, it will be hot!) and mash it in a heat-proof bowl.  Once it is smooth, mix in coconut oil, maple syrup, cinnamon, vanilla, and salt.  Enjoy!
