Looking for a cool summer treat? These popsicles are rich, creamy, and delicious! Made with coconut milk, yogurt, and honey, and coated in dark chocolate, they couldn’t be simpler to make. Perfect for a hot summer day!
We used to live near a health food store that had these magical popsicles. As you can probably guess, they were coconut popsicles covered in dark chocolate, and they were divine! Ever since we moved away, I have missed them dearly, so I am SO glad I was able to recreate them. There is just something so wonderful about the combination of chocolate and coconut. To make these delicious gems, simply mix coconut milk, yogurt, and honey together and freeze in popsicle molds. Once they’re frozen, you dip ’em in melted dark chocolate with a little coconut oil, and they are ready to devour! This is my kind of popsicle, perfect for a summer date night! 🙂

Ingredients
- Popsicles
- 1 (14oz) can coconut milk
- 2 (5oz) containers nonfat greek coconut flavored yogurt
- 1 T honey
- Chocolate Coating
- 1 cup dark chocolate chips
- 2 T coconut oil
Instructions
- Whisk together coconut milk, yogurt, and honey until well combined. Pour into popsicle molds and freeze until solid. To make the chocolate coating, combine chocolate chips and coconut oil in a heat proof bowl and microwave for 20-30 seconds. Stir, and microwave for 10 seconds more or until completely melted. Dip the popsicles in the chocolate until they are coated, and give it a few seconds to harden. Enjoy!
