Burger night is a favorite in our house, and these turkey burgers are packed with flavor! They are simple to make, so you can have dinner on the table in no time. 😉
While I love a good beef burger, I can only eat so many beef burgers without getting a liiittle tired of them. Turkey burgers are a great way to mix things up, and these Paleo Turkey Burgers are so flavorful! I simply used lean ground turkey and mixed in some fresh peppers. The result is fabulous! Serve these on homemade paleo buns for extra goodness.
How do you keep turkey burgers from falling apart?
This can be tricky, but in general I love using egg to bind things together. It makes a big difference and keeps the burgers from falling apart.
Keeping moisture to a minimum is important as well, so I’ve added some coconut flour to absorb the liquid from the pureed peppers.
Another tactic is to make sure the burgers are not too thin, as they tend to fall apart easier. Thicker burgers are the way to go when you’re working with turkey!

Ingredients
1 lb ground turkey
1 bell pepper, minced (or use food processor to puree)
1 egg
1 tablespoon coconut flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon onion powder
Chipotle Mayo
1 cup mayo
1 chipotle chili (from can of chipotles in adobo)
1 tablespoon adobo sauce (from can of chipotles in adobo)
Toppings: Red onion, lettuce, avocado
Buns or lettuce leaves for serving
Instructions
Mix together turkey, bell pepper, egg, coconut flour, salt, pepper, and onion powder and mix well. Heat skillet or grill to medium heat and grease with avocado oil. Form turkey burgers into patties 1/2 inch thick and cook about 4-5 minutes on each side, or until fully cooked. To make chipotle mayo, combine chipotle, adobo and mayo in food processor and process until smooth. Serve burgers on buns or lettuce leaves topped with mayo, red onion, and avocado. Enjoy!
