HARVEST CHEX MIX

This mix has whole grain chex mixed with nuts, pretzels, and candy corn and topped with a peanut butter sauce.  It makes for the perfect fall treat!

I love making snack foods, and chex mix is one of our favorites!  My kids go crazy for this mix, and it can easily be adapted to your tastes and the season by changing up the things you mix in.  It only takes about 5 minutes to make, which is great for when you don’t have much time!

I consider this recipe a treat, but the sugar can be decreased, and the mix ins can be as healthy as you want them to be.  I made this to take to a fall party, so I added in candy corn to make it fun and festive.  This was a crowd pleaser, and its gluten free and vegan!  I have had so many people ask me for this recipe, and my kids request this mix all the time.  My one year old is sitting with me right now, and he’s pointing at the screen yelling “chex mix!” .  Too bad we ate it all already!  Luckily its easy to whip up another batch! 🙂

Ingredients

  • 6 cups Chex cereal (I used 3 cups corn chex and 3 cups rice chex)
  • 1 cup gluten free pretzels
  • 1 cup cashews
  • 1 cup candy corn
  • 1/4 cup coconut oil
  • 1/4 cup peanut butter
  • 1/4 cup brown sugar

Instructions

  1. Mix the Chex, pretzels, and cashews in a large microwave safe bowl. In a smaller microwave safe bowl, mix together the coconut oil, peanut butter, and sugar. Microwave the peanut butter mixture for 30 seconds, then stir. If the sugar isn’t dissolved, microwave for 30 seconds more and stir again. Pour the peanut butter mixture over the dry chex mix, and stir to coat. Microwave 3 minutes total, stirring after each minute to fully coat all the ingredients. Allow the mixture to cool and then stir in candy corn. Store in an airtight container. Enjoy!
