Servings: Serves 1 Ingredients 1 peeled clove of garlicKosher salt 1 tsp. Dijon mustard 1 teaspoon freshly grated ginger 1 pork tenderloin (about 0.75 kg) freshly powdered pepper Chopped veggies such as winter squash or root vegetables (about 3/4 pound) 1 tsp. olive oil Directions Add 1 teaspoon of salt and crush garlic with the flat side of a large knife.
Coat pork with mustard, crushed garlic, and ginger, then heavily season with pepper. Refrigerate before to roasting. (The garlic-ginger coating should be applied at least one hour in advance; however, Jones applies it the morning of the day she roasts the pig.) Pre-heat the oven to 375 degrees and set the tenderloin in the center of a baking dish.
Rub the veggies with olive oil and 1/8 teaspoon of salt. Distribute them throughout the meat in the baking dish. Roast the tenderloin for 30 to 45 minutes, or until an inserted thermometer reads 155 degrees. Allow the meat to rest for 5 to 10 minutes. If veggies aren’t done when the pork is, cook them for an additional 5 to 10 minutes (until tender).
