Lemon Berry Popsicles

Ingredients

Scale
  • 1 cup strawberries
  • 1/4 cup 100% apple or white grape juice
  • Juice of 1 lemon
  • 2 T sugar
  • 1 cup water
  • 6 oz container lemon yogurt
  • 1 cup blueberries
  • 1/4 cup 100% apple or white grape juice

Instructions

  1. Start out by blending strawberries and 1/4 cup juice in blender or food processor. Pour some in each popsicle mold until it is 1/3 of the way full. Freeze for an hour or two, until semi solid or solid. Then make the lemon layer by mixing lemon juice, water, sugar, and yogurt in a bowl. Pour some in each popsicle mold until it is 2/3 of the way full. Freeze for another hour or two, until semi solid or solid. Then blend blueberries and 1/4 cup juice in a blender or food processor. Pour some in each popsicle mold until it is almost full. Freeze for an hour or two, until solid. Enjoy!

Notes

*Don’t forget to add the popsicle sticks when you add the lemon layer. They are not easy to get in after the layer is frozen! (not that I did that or anything)

*You may have some leftovers depending on the size and amount of popsicle molds you have. Use the leftovers in a smoothie or drink it as is. 🙂
