Tips for Making this Paleo Pistachio Cranberry Bark
- This chocolate stays relatively soft, so its best to store it in the freezer.
- You can easily add whatever toppings you’d like. Any nut/dried fruit combo would be delicious!
- Line your pan with parchment paper for the easiest removal.

With just 6 ingredients and 5 minutes of hands-on time, you can have this smooth, creamy Paleo Pistachio Cranberry Bark.
1 cup coconut oil
1 cup cocoa powder
1/2 cup honey
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup shelled pistachios
1/2 cup dried cranberries
Melt coconut oil, cocoa powder, honey, and salt together in the microwave or on the stovetop over medium heat. Whisk together until smooth and creamy. While it is melting, line a 13×9 pan with parchment paper. Pour the melted chocolate mixture into the pan, sprinkle evenly with pistachios and cranberries, and place in the freezer until set, about an hour. Break into pieces and store in the freezer. Enjoy!
