PALEO CHOCOLATE PISTACHIO CRANBERRY BARK

Smooth rich chocolate sprinkled with pistachios and cranberries is the perfect, easy Paleo dessert.

We love chocolate in our house, but Paleo friendly chocolate can be expensive, so I set out to make my own. I’m happy to report, it could not be any easier! With only 6 ingredients and 5 minutes of hands on time, this dessert is a breeze to make. I love how creamy it is, it really does melt in your mouth, much like milk chocolate. I hope you enjoy it as much as we do!

 

HOW TO MAKE THIS PALEO PISTACHIO CRANBERRY BARK

  • Melt coconut oil, cocoa powder and honey
  • Pour into a pan
  • Sprinkle with toppings
  • Place in the freezer until set

TIPS FOR MAKING THIS PALEO PISTACHIO CRANBERRY BARK

  • This chocolate stays relatively soft, so its best to store it in the freezer.
  • You can easily add whatever toppings you’d like. Any nut/dried fruit combo would be delicious!
  • Line your pan with parchment paper for the easiest removal.

PALEO PISTACHIO CRANBERRY BARK

Description

With just 6 ingredients and 5 minutes of hands-on time, you can have this smooth, creamy Paleo Pistachio Cranberry Bark.


Ingredients

SCALE

1 cup coconut oil

1 cup cocoa powder

1/2 cup honey

1/4 teaspoon salt

1 teaspoon vanilla

1/2 cup shelled pistachios

1/2 cup dried cranberries


Instructions

Melt coconut oil, cocoa powder, honey, and salt together in the microwave or on the stovetop over medium heat.  Whisk together until smooth and creamy.  While it is melting, line a 13×9 pan with parchment paper.  Pour the melted chocolate mixture into the pan, sprinkle evenly with pistachios and cranberries, and place in the freezer until set, about an hour.  Break into pieces and store in the freezer.  Enjoy!
