For a protein packed breakfast or afternoon snack, try this peanut butter and jelly yogurt parfait!  Perfect for back to school, this healthy treat is packed with protein, healthy fat, and nutrients.  Bonus: It is kid approved!!!

Peanut butter and jelly reminds me of being a kid and packing my lunch for vacation bible school in the summer.  I remember pulling my PB & J out of my paper lunch sack (along with my fruit roll up), and scarfing it down. No savoring my lunch, it was gone in a flash.  🙂 As an adult, I still love the combination of peanut butter and jelly.  With school starting back up, I was looking for high protein, nutrient packed recipes, and I came up with this one.  It makes the perfect breakfast (with a little granola added or whole wheat toast on the side), or is a great after school snack.  It will fill you and your kiddos up, but won’t spoil your dinner.  Perfect all around!

Did I mention how gorgeous it is?  The beets add such vibrant color to the jam.  Here’s how I made it:  First I made the Strawberry Beet Chia Jam.  Then, all I had to do was take some plain yogurt and top it with peanut butter, jam, and fresh fruit.  SO simple!  It is definitely a meal or snack you can feel good about eating and feeding to your family.

  • 1/2 cup plain yogurt
  • 1/8 cup Strawberry Beet Chia Jam (link above)
  • 1/8 cup peanut butter
  • 1/4 cup chopped fresh fruit
