PEANUT BUTTER BANANA FROZEN YOGURT

Secretly healthy, this frozen yogurt is the perfect combination of peanut butter and banana. Made with lowfat yogurt and sweetened with dates, it is light and creamy, and delicious!

There’s something about the combination of peanut butter and banana that is really addicting!  I can’t seem to get enough of it lately.  I’ve had a PB/banana milkshake, overnight oats, and now this frozen yogurt.  Good thing they are healthy ingredients, then I don’t feel so bad about overindulging!   This recipe pairs one of my favorite foods, frozen yogurt, with peanut butter and banana, and it couldn’t be more delightful.

After being outside all day playing at the splash park with my kiddos, this  was the perfect afternoon snack.  My kids were over the moon because they consider frozen yogurt a treat.  I felt 100% good about giving it to them, because it is made with only healthy ingredients, and no added sugar.  Summer just isn’t the same without ice cream!  Top it with chocolate chips, chopped nuts, or fresh fruit.  Enjoy!

PEANUT BUTTER BANANA FROZEN YOGURT

Ingredients

  • 2 cups lowfat plain greek yogurt
  • 1/2 cup skim or 1% milk
  • 1/2 cup peanut butter
  • 6 medjool dates, pitted
  • 2 bananas, not super spotted or brown
  • 1 T vanilla

Instructions

  1. Put dates in food processor or blender and process until finely chopped or smooth. Add bananas, yogurt, milk, peanut butter, and vanilla, and pulse a few times until well blended. Transfer to a ice cream maker and process until it is the consistency of soft serve. Eat immediately, or freeze for an hour or two if you prefer firmer ice cream. If you don’t have an ice cream maker, freeze until it reaches the desired consistency.

Notes

*Don’t use spotted or brown bananas unless you want a really strong banana taste.
