PUMPKIN CHAI LATTE (PALEO, WHOLE30, AIP)

Spicy chai flavors blended with sweet pumpkin make for a cozy, warm, delicious pumpkin chai latte.  This latte is also paleo and refined sugar free, so you can enjoy this sweet treat without all the added sugar!

I used to love the pumpkin spice lattes from Starbucks, but the older I get, the more those drinks just do not taste as good to me.  Plus, I live in the middle of nowhere, which makes running to a coffee shop a little difficult.  Luckily, this is super easy to whip up at home, and makes two servings so you can put one in the fridge to enjoy tomorrow.  All you need is a good blender, and 10 minutes for the tea to steep, and you can have a pumpkin chai latte that is just as delicious as the coffee shop version.

 

HOW TO MAKE THIS PALEO PUMPKIN CHAI LATTE:

  • Heat water and add chai tea bags.
  • Blend up all other ingredients.
  • Mix tea and blended ingredients together, heat, and serve!

TIPS FOR MAKING THIS LATTE:

  • You can substitute your favorite non-dairy milk.
  • For a Whole30 friendly drink, add 4-5 dates in place of the honey.
  • For a chai without any black tea, Pukka brand has a great chai that is just herbs and spices.
  • If you’re following AIP, choose a chai without any black pepper, or make your own.
  • You can easily double or triple this recipe and store it in the refrigerator for up to 2 weeks!

Ingredients

SCALE

1 cup water + 2 chai teabags (choose AIP friendly chai if needed)

2 cups unsweetened almond milk (use coconut milk for AIP)

1 tablespoon pumpkin

35 tablespoons honey (depending on how sweet you like it) (sub dates for honey for Whole30)

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

1/8 teaspoon cardamom


Instructions

  1. Boil water, remove from heat, and add 2 tea bags. Cover and steep for 10 minutes. While the tea is steeping, combine the rest of the ingredients in a blender and blend until completely smooth. Once tea is done steeping, pour tea into blender with other ingredients and blend together. Heat the mixture to your desired temperature and enjoy!
