Mornings can be hard! Do your mornings ever feel rushed and frazzled? One thing that can make a big difference is having breakfast prepared ahead of time. I love this Sausage Sweet Potato Skillet because it is so simple, but so delicious. All you need is a few free minutes to whip it up, and you can eat it every morning this week. Simply brown some breakfast sausage, and while you’re waiting for it to cook, chop up a few sweet potatoes and a bunch of kale. Throw the kale in with the sausage and roast the sweet potatoes in the oven. Once everything is cooked, combine it all together and stick it in the fridge. In the morning, just add a scoop of the mixture to a skillet, add an egg however you like it best, and in 5 minutes or less, you have a delicious, hearty breakfast. SO EASY!Print
