SAUSAGE SWEET POTATO BREAKFAST SKILLET

Are you always running out of time in the morning?  This make-ahead breakfast takes just 15 minutes and makes a week’s worth of breakfasts for around $5.  Sausage, sweet potato, kale, and egg combine to make a delicious, simple breakfast you can enjoy any day of the week.  Paleo and Whole 30 friendly.

Mornings can be hard!  Do your mornings ever feel rushed and frazzled?  One thing that can make a big difference is having breakfast prepared ahead of time.  I love this Sausage Sweet Potato Skillet because it is so simple, but so delicious.  All you need is a few free minutes to whip it up, and you can eat it every morning this week.  Simply brown some breakfast sausage, and while you’re waiting for it to cook, chop up a few sweet potatoes and a bunch of kale.  Throw the kale in with the sausage and roast the sweet potatoes in the oven.  Once everything is cooked, combine it all together and stick it in the fridge.  In the morning, just add a scoop of the mixture to a skillet, add an egg however you like it best, and in 5 minutes or less, you have a delicious, hearty breakfast.  SO EASY!

Ingredients

SCALE
  • 1 pound ground breakfast sausage
  • 34 sweet potatoes
  • 1 tablespoon olive oil
  • salt and pepper
  • 1 bunch kale
  • 5 eggs

Instructions

  1. Preheat oven to 400 degrees F. Brown sausauge in skillet until it is fully cooked. While sausage is cooking, chop kale and add it to sausage in skillet. Meanwhile, dice sweet potatoes, toss in olive oil, sprinkle with salt and pepper, and cook on sheet pan in oven. Cook sweet potatoes for 15 minutes, then stir and cook another 10-15 minutes until tender and a little crispy. Allow sausage and sweet potatoes to cool, then combine them and store in the refrigerator. In the morning, heat a skillet over medium heat. Add a scoop of the sausage/sweet potato mixture, add an egg, and cook until the egg is cooked and sausage mixture is warmed. Enjoy!
