SUPREME PIZZA {BEAN} BURGER

Flavorful and filling, this quick Italian burger is perfect for a healthy weeknight meal.  Topped with cheese and marinara sauce, it is a recipe the whole family will love!

I’m back with December’s Recipe ReDux post!  This month’s ReDux theme was to take a recipe from a cookbook we love and “ReDux” a recipe from it.  Since I LOVE cookbooks, I was so excited for this month’s challenge. I literally read cookbooks for fun.  I think I have a slight problem.  There’s nothing I love more than curling up on the couch and flipping through a cookbook that is filled with lots of pretty pictures, it is one of my favorite ways to relax!  At any given time, I likely have at least 5 or 6 cookbooks checked out from the library.  I love seeing all the bright and shiny new cookbooks.  Then when I find a cookbook I really love, I buy a copy for my own collection.  So, for this ReDux I chose the last cookbook I bought: The Pioneer Woman Cooks: Dinnertime.  I know I’m not alone in my love for Ree’s simple and delicious recipes, and her cookbooks are my very favorite.  They have a ton of pictures, and are so pretty!

I chose to ReDux the Supreme Pizza Burger.  I made it healthier by using a bean burger instead of beef, and it turned out so well!  While I love bean burgers, for me the toppings are what really make the burger, so the pizza toppings really took this to the next level.  Since my kids would NOT say bean burgers are their favorite thing, adding some pizza toppings was the perfect way to get them interested in trying it.  My two year old {might} have made some gagging noises when I put this in front of her, but after she tried a tiny bite, she proceeded to gobble the rest down pretty quickly.  It was a big hit!  Bonus: It is super simple to put together, so it is perfect if you need a quick meal!

SUPREME PIZZA {BEAN} BURGER

INGREDIENTS

  • 2 (16oz) cans red beans
  • 1 1/2 cups oats
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 tsp italian seasoning
  • 2 tsp dried basil
  • 1 tsp salt
  • 2 eggs
  • 1/4 cup parmesan
  • Toppings:
  • Whole grain hamburger buns
  • Mozzarella cheese slices
  • Green bell pepper
  • Good quality marinara sauce

INSTRUCTIONS

  1. Drain red beans and mash them. Don’t rinse them! Pulse oats in food processor until they are a powder. Add oats to the mashed beans and mix in seasonings, eggs, and parmesan. Let the mixture sit for about 10 minutes to thicken. In the meantime, heat a skillet over medium heat. Add a small amount of oil so the burgers don’t stick. Form the bean mixture into patties roughly the size of a hamburger bun. The patties should be about 3/4″ thick so they can easily cook all the way through. Place the formed patties in the skillet and cook 6-8 minutes per side. Adjust the heat if needed so the patties have time to cook all the way through without burning. There should be a little crust on each side. When they are done, serve them on whole grain buns topped with cheese, bell pepper, and marinara. Enjoy!
