Whole Wheat Dinner Rolls

  • 2 1/2 cups skim or 1% milk
  • 4 tsp active dry yeast
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup softened butter
  • 2 tsp salt
  • 4 cups white whole wheat flour
  • 3 cups all purpose flour


  1. Warm milk until slightly warmer than room temperature. You don’t want the milk to be hot! Add the yeast to the milk and let it sit while you prep the other ingredients. In a large mixing bowl, beat the sugar, eggs, butter, and salt. Add in the milk/yeast mixture and and mix until well combined. Gradually add both flours, and mix thoroughly, until a soft dough forms. Cover dough with a tea towel, and allow it to rise in a warm place until it doubles in size, about an hour. Punch down the dough and allow it to rise once more until it doubles in size. Divide dough into 36 pieces, gently rolling each piece of dough to form a ball. Arrange the balls of dough onto a greased jelly roll or baking pan, with the sides of the rolls almost touching. Cover again with a tea towel and allow the rolls to rise until doubled in size, about 45 minutes. Preheat oven to 400 degrees F, and bake rolls for 12-16 minutes, until brown on top and cooked all the way through. You may want to check a roll in the middle of the pan to make sure it’s not doughy inside. Let the rolls cool slightly, and enjoy!


*To create a warm environment for the dough to rise, put the bowl of dough in the oven (just make sure the oven is OFF), and stick a pan of boiling water in the oven. This will get the oven steamy and warm, and help your bread to rise nicely.
