WHOLE30 ZUPPA TOSCANA (PALEO ZUPPA TOSCANA)

Whole30 Zuppa Toscana is a creamy, delicious soup that the whole family will love. It comes together in a snap, so you can have it on your dinner table in no time!

I love quick and easy meals my whole family will love, and this soup fits that bill! I love that I can make it start to finish in around 30 minutes. For my family, I’ll typically serve this with crackers (Simple Mills are my favorite!) and fresh fruit, like oranges.

 

HOW TO MAKE THIS SOUP:

It starts with sauteeing bacon and sausage, then adding in some onion and garlic and cooking a few minutes. Next, you’ll add potatoes, kale, chicken broth, and seasonings and cooking until the potatoes are tender. Finally, you’ll stir in some coconut cream and it’s ready to serve! It comes together in about 30 minutes, so it is perfect for a quick weeknight meal.

IS ZUPPA TOSCANA ITALIAN?

It translates into Tuscan Soup, and did originate in Italy. It traditionally has beans and a variety of veggies as well as Tuscan bread added to it. This Whole30 version omits the beans and bread, but it is still full of the traditional flavors of Zuppa Toscana.

DOES ZUPPA TOSCANA HAVE GLUTEN?

Traditional Zuppa Toscana does have bread added, so it has gluten. This version is gluten free, Whole30 and Paleo friendly.

WHAT DO I SERVE WITH THIS SOUP?

As with most soups, the options are endless. You could serve it with a side of roasted veggies or a salad. It also pairs well with non-Whole30 approved crackers, bread, or rice. For Whole30 friendly sides, you could have fresh fruit, a smoothie, or sweet potato fries. Really any fruit or veggie you love would work well as a side dish – I love to choose sides I know my whole family will love!

Description

Ingredients

SCALE

6 strips bacon, cut into chunks

12 ounces mild Italian sausage

10 cloves garlic, peeled and minced

1 yellow onion, diced

5-7 yukon gold potatoes, diced (about 6 cups)

1 bunch kale, removed from stems and chopped (about 4 cups)

1 teaspoon salt

1/2 teaspoon pepper

1/2 – 1 teaspoon crushed red pepper

15 oz can coconut cream, refrigerated overnight – use cream only


Instructions

In a large pot over medium heat, cook bacon and sausage until sausage is fully cooked.  Drain grease, leaving 1 tablespoon in pan.  Return to heat and add onion and garlic, cooking 2-3 minutes.  Add in potatoes, kale, chicken broth, salt, pepper, and crushed red pepper.  Turn heat to high and bring to boil.  Reduce heat to medium low and cover and simmer for 20 minutes, until potatoes are tender.  Stir in cream, adjust salt and pepper to taste, and serve!
