We eat a lot of potatoes in our house, so I know a good potato recipe when I see one! 🙂 Oven roasted potatoes are a staple at breakfast and dinner alike, and I love that these roasted potatoes are so versatile. They pair perfectly with steak or chicken, and go equally well with scrambled eggs and sausage. They are simple to make, with only a few minutes of hands-on time – then you put them in the oven and let it do all the work! 😉

 

TIPS FOR MAKING GARLIC HERB POTATOES

  • Make a big batch of the seasoning mix to have on hand- it saves so much time, and you can use it to season chicken and other vegetables as well!
  • Make a big batch of the potatoes and have the extras for breakfast or lunch the next day
  • Use parchment paper or foil to line your pan for easier cleanup.
  • Substitute any type of potato – russet and yukon gold work great as well!

HOW TO MAKE THIS RECIPE:

It really couldn’t be simpler – just turn on the oven, halve the potatoes while it’s heating up, toss them in oil and the seasoning blend, and bake! You could finish up the rest of the meal while the potatoes are baking, or even throw some chicken breasts or sausage in the oven along with the potatoes and let them all bake together.

Ingredients

SCALE

1 lb baby red potatoes

1 tablespoon avocado oil

1 tablespoon garlic herb seasoning

Garlic herb seasoning:

2 teaspoons dried parsley

1 teaspoon dried oregano

1/2 teaspoon dried sage

1/2 teaspoon dried thyme

1 teaspoon dried basil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon pepper


Instructions

Preheat oven to 375 degrees F.  Cut the potatoes in half, toss in oil and seasonings, spread on a baking sheet, and bake 20 minutes.  Stir potatoes and bake 10-15 minutes more, until potatoes are tender in the middle.
